Oh my gosh!! it is a beautiful day here in the Twin Cites of Minnesota. They don’t happen a lot and so I get excited. I mean the sun is shining and the skies are blue.The birds are chatting and neighbors are too. The sounds of the neighborhood flow in out of the open windows. Flowers are being planted and gardens are being tended to. Kids are laughing and flying down the road on their bikes.In the distance you can hear the music of… could that be the ice cream man?
I took advantage of the beautiful morning myself . I made it out to the deck and managed to plant myself several pots of Zinnias. I just love them. They come in all these bright colors and so many different sizes. I planted tall ones, short ones,pink ones and orange ones and everything in between.The birds,bees and butterflies love them and I in turn love watching all of them. At the end of the season I leave the seed heads and the birds come all winter long looking for a missed seed or two.
After busy morning of playing in the dirt I am going to sit down with a cup of coffee and a couple of these Peanut Butter cookies and enjoy the sun. They are a simple classic cookie, one easily made with the kids and I haven’t met anyone that didn’t like them.
Tell me what is your favorite peanut butter snack?
- 1/2 cup oil
- 1/2 cup peanut butter (smooth or chunky)
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 1/4 cup flour
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- In medium bowl sift flour, baking powder,baking soda,salt and set aside. In another medium bowl mix oil,peanut butter,sugar,brown sugar, and egg cream together until thoroughly mixed, then add dry ingredients, mix until incorporated. Dough will be wet and sticky, chill for 20 minutes. Remove from fridge and roll into 1 or 2 inch balls, flatten with the bottom of a glass that has been dipped in granulated sugar and then use a fork to make the classic criss cross design. Bake on lightly greased cookie sheet and bake for 10-12 minutes at 375 degrees.
- I have only used NON natural peanut butter in this recipe such as Skippy or Jif. That sounds horrible...non natural. lol.
- I have only used oil, have not used butter. If you choose to use butter either use unsalted,or omit the 1/4tsp salt.
